Easy Turkey Ranch Wrap

I’ve been doing pretty good at packing Rex a lunch most days, but packing a lunch for me is harder. I love my homemade bread, but not for sandwiches (it’s just too thick).  I really prefer hot lunches, but that’s just not feasible when out and about with a toddler.  So, I’ve been doing a lot of wraps lately and it seems to be working well.  Here’s a simple one that is consistently yummy and fast to make.

Turkey Ranch Wrap

Ingredients:

  • 1 burrito size flour tortilla
  • 3-5 slices turkey lunch meat
  • 1 spoonful ranch dressing (or desired amount)
  • Shredded cheddar cheese
  • Thinly sliced cucumber (about 1/4 cucumber)

Directions:

On flour tortilla (slightly towards one side), spread ranch dressing and sprinkle cheddar cheese on it. Place sliced cucumber and lunch meat on top of cheese.  Roll it up, burrito style.  Slice in half if desired.

This wrap works equally well with hummus and feta subbed in for the ranch and cheddar.  It’s filling without being heavy and doesn’t get soggy.  Whats your favorite easy lunch wrap combination?

In the Blink of an Eye (and Some Thoughts on Lunch)

I blinked and suddenly it was 2014.

Well, that isn’t quite right.  Sometime in between that blink and the change of the calendar was travel and holidays and general busyness. I hope everyone had nice holidays.  Ours involved travel and family and were quite nice. (Except for the 12 hours of intense food poisoning.  That wasn’t nice at all.  AT ALL.)

I gave up New Years Resolutions as a resolution one year and have managed to keep it. YAY, ME!  I hate the stress that it forces on us at an already tough time of year.  Not only is it dark and cold and nasty out, but now you have all this added pressure to start fresh and do all of these things.  Nope.  Not for me. I’m tired of beating myself up about things. How about, instead of making grand resolutions and proclamations, we instead try to be kinder to ourselves?  So what if you ate the entire plate of Christmas cookies. So what if your house is a bit cluttered.  Frankly, just making it through winter is the best most of us can do and that’s ok!

Now that we’ve taken care of the business of Resolutions, I’d like to share a general improvement I’ve made. Over the last two months, our consumption of fast food has gone way up.  Going places with the kiddo, prepping for holidays, etc. all makes for a hurried mama who doesn’t quite have it together enough to pack a lunch.  After the 12 hours of porcelain prostration, fast food was no longer on my menu for a while.  I’d already been researching better ways to pack food for a toddler while still keeping my sanity.  The great big web is full of ideas, many residing on Pinterest on boards professing love for Bento box style lunches. (I’m especially enjoying this shared board called Let’s Pack Lunch.)  While I won’t be cutting any shapes or turning his sandwiches into panda bears any time soon, it did give me a lot of ideas for different containment devices and food combinations.

Here’s today’s lunch:

That was after Rex had eaten about halfway through it.  It contains cheese, ham, crackers, peas, and cut grapes. The container is a Ziploc Divided Container (you can find them all over, but best price is on Amazon).  The small container inside is part of a Pruta set from IKEA. The little colored cups are silicone cupcake liners. (I know it’s all plastic, but it is BPA free.  When toting a lunch with toddlers in the mix, glass tends to be a bad idea and I can’t stand the flavor that stainless steel imparts on its contents.) This lunch box is working quite well for us. It acts as both container and serving tray.  I can fit two of them along with this ice pack, plus two diapers and a travel pack of wipes into our awesome lunchbag.

We’ve successfully taken this setup a few times now and it’s working quite well. Everything stays contained and cold and it is really easy to serve up on the go. I’m hoping to add more variety as we go along, but for now I’m just happy to not be stopping under the golden arches.
