Chicken with Pesto and Mozzarella

An easy chicken dinner that packs a lot of oomph and barely takes any time.  Serve it with potatoes, veggies, or anything you like.  (And, take it from someone who knows, be sure and wash the cheese off your pan and spatula while it’s still warm.  Just sayin’…)

Chicken with Pesto and Mozarella


  • 6 chicken tenderloins (or 4 chicken breasts)
  • Pesto
  • Mozzarella


  1. Preheat oven to 400 degrees
  2. Cook chicken in a bit of olive oil
  3. Place cooked chicken on a baking sheet
  4. Top with pesto and chopped mozzarella
  5. Bake 5 minutes
  6. Serve immediately
